The eggplant at the farmers' market looked too good to pass up.  Slated for Sunday supper.  Any recipe suggestions?

    Penne with Tomato and Eggplant Sauce - I texted the recipe to you and usually season a little more than Rao's recommends (maybe Italian Seasoning or add a little crushed red pepper.
